Gilbert grew up around a rail siding on land donated by William 'Bobby' Gilbert in the early 1900s, and stayed an agricultural town, known as the 'Hay Capital of the World' from 1911 into the late 1920s, for most of the 20th century. That farming history is still visible in the Heritage District's early-1900s buildings, several of which are on the National Register of Historic Places.
